Ingredients
Mini Christmas Cakes
- 125 g apple juice (or brandy)
- 500 g mixed dried fruit
- 120 g dried apricots, diced
- 100 g Butter
- 80 g brown sugar
- 2 eggs
- 160 g SR flour
- 100 g slivered almonds (optional)
- 1 tsp mixed spice
Decoration
- 150 g white chocolate melts
- mint leaf jellies
- red mini M&Ms

1. Preheat oven to 160 degrees.
2. Combine the dried fruit & diced apricots in a plastic bowl and pour apple juice or brandy over. Leave to soak 15-30mins.
3. Add butter & brown sugar to TMX bowl and cream 20sec/sp5. Scrape down and repeat if necessary.
4. Add eggs and combine 5sec/sp4.
5. Add flour, spice, fruit mixture & almonds (if using). Combine 10sec/ rev /sp4. Use spatula to help combine if necessary.
6. Spoon mixture into greased mini muffin holes (24-hole tray plus a 12-hole tray).
7. Bake aprox 18mins @ 160 degrees.
1. Wash & thoroughly dry TMX bowl. Add white choc and grate 5sec/sp8. Melt 2mins/50degrees/sp3 or until melted.
2. While choc is melting, cut mint leaves jellies into 4 thin slices to represent holly leaves. Sort thru a packet of mini M&Ms to find the red ones.
3. Once the cakes have cooled, drizzle a teaspoon of melted choc onto the top then quickly add 2 pieces of mint leaf & 2 red M&Ms to represent holly. (Don't be tempted to add choc to more than about 4 at a time, as the choc will cool & set before you can add the lollies).
4. Refridgerate until ready to serve.

These are great for entertaining in December. Best eaten the day they are baked. May be frozen undecorated.
