Ingredients

Cake Base

  • 1 orange
  • 300 grams Almonds raw
  • 8 medjool dates
  • 65 grams coconut oil
  • 1 zucchini, peeled & roughly chopped
  • 55 grams dessicated coconut
  • 45 grams poppy seeds
  • pinch Himalayan salt

Orange Cream

  • 280 grams raw cashews
  • 5 large oranges, juiced
  • 1 lemon, juiced
  • 180 grams dark agave syrup
  • pinch Himalayan salt
  • 200 grams coconut oil
  • 2 tablespoons lecithin

Recipe's preparation

    Cake Base
  1. Preparation time is 20 mins, but allow 1-2 hours of freezer setting time between layers.

    Peel zest from orange and grind in TM bowl 10 secs/speed 9. Set aside.

    Juice orange (after removing zest). Set aside.

     

    Grind almonds 8 secs/speed 7. Set aside.

     

    Blend dates 5-10 secs/speed 6-7. Scrape down sides of bowl. Add coconut oil & zucchini, blend a further 10 secs/speed 5.

    Add remaining ingredients (including zest, juice & almonds) and mix 20 secs/speed 6-7. Using spatula blend further 10 secs/speed 4 til mixed well.

     

    Divide mixture in half and spread one half into a lined 22cm springform pan. Ensure baking paper lines both bottom & sides of pan.

     

     

     

  2. Orange Cream
  3. Blend all ingredients except coconut oil & lecithin for 1 min/speed 9.

     

    Add coconut oil & lecithin, blend a further 30secs/speed 9.

     

    Divide mixture in half.  Place one half on top of cake base.

     

    Place in freezer for approximately 2 hours until firm.

     

    When firm enough, place remaing cake base on top of the set orange cream and finish with remaining orange cream. Place in fridge/freezer until set.

Tip

Can use the pulp left over from making Almond Milk.

Keep stored in fridge.
