Ingredients
Pineapple Cream & Biscuits
- 200 g Tennis Biscuits, or Marie Biscuits
- 1 Packet of pineapple or lemon jelly
- 400 g Tinned Crushed Pineapple
- 1 Tin Ideal Milk, Also known as evaporated milk
- 10 g lemon juice
- 250 g whipping cream
Topping
- 1 Flake

I'm cooking this todayRecipe's preparation
Add the biscuits & crush for 5 secs, speed 5 (make sure they are not crushed to finely)
Set aside
Chill the ideal milk overnight in the fridge
Drain the pineapple & set aside (keeping the juice) - make sure all the juice is squeezed out
Add pinapple juice & powdered jelly into the TM & heat for 5 mins / 90 degrees / speed 2
Set aside into the fridge & allow to cool completely
Wash and dry the TM bowl
Insert the butterfly
Add the ideal milk & cream & beat for 1 min / speed 4
Add the lemon juice & the cooled jelly
Mix for 2 mins speed 4
Add in the crushed pineapple & mix for 10 secs / reverse / speed 2
Butter your dish
Add a lyer of crushed biscuits
Add a layer of pineapple cream
Continue the layers until the mixture of biscuits and pineapple have all been used, ending in a layer of biscuit crumbles.
Crush the flake over the top
Place in the fridge & allow to set for at least 4 hours

Ideal milk can be replaced with 1 tin of condensed milk & 250g whipping cream
Don't worry if your pineapple mixture is not thick - the jelly & cream will make it set.
I used Marie biscuits in mine as tennis biscuits here in Australia can be very expensive

I've just made this and the biscuits were either biggish chunks or fine powder after 5 seconds. Marie biscuits is what I used. The jelly set really nicely but overall, the mix is very runny so there was no way to layer as such as all the biscuit bits floated to the top. Will let it sit overnight and see what it turns out like tomorrow. it would make good icecream I guess if it doesn't set...

I'll be trying this today - the recipe sounds interesting - unusual to mix the jelly and lemon juice with cream and ideal milk! Thank you for the recipe. Reminds me of my mother in law's tart!
