Ingredients
Pudding
- 80 g raw sugar
- 1 lime zest
- 120 g Self Raising Flour
- 2 teaspoons ground cumin, (You can use any spice you like)
- 70 g Butter
- 1 teaspoon vanilla
- 1 egg
- 60 g Milk
Topping
- 4 heaped tablespoons brown sugar
- 1 peach, sliced into thin wedges

Mill the sugar and lime zest 10 sec, spd 9. Scrape sides of bowl with spatula.
Add flour, cumin and butter. Mix for 4 sec, spd 5. It should resemble breadcrumbs.
Add vanilla, egg and milk and mix 10 sec, spd 3.
Arrange peach slices into base of ramekins or silicone moulds. Add a heaped tablespoon of brown sugar. Pour mixture over top.
Place ramekins into varoma dish. Steam 25-30min, varoma, spd 1.
Serve with icecream, custard or cream.

Tip
I recommend trying it with cumin. It's unusual but peach goes well with curry flavours. Otherwise try cardamom (add during step 1) or mixed spice.
You can easily stretch this to 6 serves, depending on the size of your ramekins or moulds.
