  1. put sugar/lemon rind/cornflour and grind 20secs speed 10

    scrape down add coconut milk and water and cook 7min/90/speed 4

     

    can be served chilled with fresh fruit or hot with your favorite dessert x

    Thanks, I only coconut cream so used that and subbed the lemon for vanilla essence, next time i think i will do a little less cornflour.

    I made this without the lemon rind, it had the custard consistency but it tasted a bit too coconuts for me. It wasn’t bad just might add vanilla essence if I make again

    Great recipe!  I substitute the sugar for 70g of coconut sugar.  Yum!
