Recipe is created for
TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Really refreshing cordial. Did use white sugar and doubled (after all its Christmas) Glad I have a lemon tree!
Lovely lemon cordial recipe! Thanks for sharing.
My thought about cordial looking brown may be if you are using a darker raw sugar.
I think my lemons may have been sweeter than usual, because when I used the recommended quantity of sugar, the result was undrinkable. I added the juice of another 3 lemons from a different tree, and it was lovely. I will check the sweetness of the lemons and adjust the sugar content accordingly next time! I used raw sugar, and the resulting cordial was gold in colour.

My cordial was very murky too, and after ready comments I cooked it at a higher temperature for a while, but no change. So maybe it's getting too hot? Might try with white sugar next time.

I also found my cordial went a 'murky brown ' , so I trawled the net and discovered a book called Preserves by Pam Corbin.
i found this comment;
it has to come up to 88° – 90° C whilst being simmered, for two minutes, this not only extends the shelf life but transformed the cordial into a paler and brighter fluid.[/b] Now it tasted right,
I would make sure your temperature is correct, you might have to use a thermometer to be exact.
To keep the cordial longer I remember my mum, boiling it in the vacola.
I would consult a vacola preserving book.
Thanks for sharing this recipe, really delicious and no nasty stuff in it! My cordial was a rather murky brown colour. I only used lemons and followed recipe, does anyone know why? Thanks
This cordial is very tasty and is really refreshing!
I've made this a few times and sometimes substitute some lemons for limes. I usually double it and it's fine. Great recipe, thank you.
Great recipe, the lemon isn't to overpowering but nor is it too sweet

Second time I have made this cordial. Easy to make and excellent taste.
