Ingredients

  • 70 g Salted Cashew nuts
  • 3 spring onions (chopped)
  • 1 large green chilli (chopped, seeds left in)
  • 3 cloves garlic
  • 1 stalk Lemon grass (thinly sliced)
  • 3 bay leaves
  • 30 g olive oil
  • 400 g coconut milk
  • 750 g raw prawns (peeled)
  • 4 fresh basil leaves
  • 80 g fish sauce
  • 20 g raw sugar
  • half a red capsicum (de-seeded & sliced)

Recipe's preparation

  1. Plase cashew nuts into the TM bowl and mill for 6 seconds / speed 9.  SET ASIDE for later

  2. Place spring onions, chilli, garlic, lemon grass & bay leaves into TM bowl and mill for 10 seconds / speed 7.

  3. add oil and saute 2 mins / varoma temp / speed 1

  4. add coconut milk and cook 5 minutes / varoma temp / speed 1

  5. Slowly blend sauce for 30 seconds / going from Speed 5 to Speed 9gradually.  Continue to blend for 10 seconds / speed 9.

  6. Add prawns and cook for 6 minutes / varoma tempCounter-clockwise operation"Counter-clockwise operation"  / Gentle stir setting"Gentle stir setting" .  If prawns are frozen cook for an additional 2 minutes.

  7. Add fish sauce, fresh basil, sugar, red capsicum and cashew nuts (from step 1) and cook for 2 minutes / varoma tempCounter-clockwise operation"Counter-clockwise operation"  / Gentle stir setting"Gentle stir setting"

Tip

Serve with steamed rice and sprinkle with fresh corriander leaves (if you like).

    Every single person at the table loved this meal - easy & quick - majority of things already in the pantry. Only had to shop for the lemongrass and chilli. Great flavours and not overly hot with spice, just right for me (with lame tolerance for chilli lol)

    The curry was very nice however it was very salty which we presume was due to the recipe using salted cashews and 80 gm fish sauce. We will reduce the amount of fish sauce next time and try again.

    This was quick and easy and really enjoyable! I didn’t have bay leaves so used kaffir lime leaves. Red chilli instead of green and mixed seafood rather than prawns. All substitutes worked well. My only query is quantity of fish sauce. It seemed rather excessive and I wondered if it might have been an error? I used have the amount. Curry sauce was a lot darker than recipe photo. Will definitely cook again and recommend!! 🌺
