Ingredients

  • 5 cloves garlic, (or 1 large dessert spoon crushed garlic)
  • 1 long red chilli, sliced
  • 1 teaspoon ground ginger, (or 5cm fresh ginger grated)
  • 100g cashew nuts
  • 1 tablespoon oil, (I use coconut oil)
  • 1 chicken breast fillet, sliced thickly
  • 1 red/green capsicum, de-seeded & sliced
  • 1 quarter cauliflower, sliced
  • 1 tablespoon vegetable stock concentrate
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce, (or Tamari)
  • fresh coriander leaves, (can use parsley leaves)

Recipe's preparation

  1. Put Garlic and Ginger into TM bowl and chop 7 seconds speed 8.

  2. Add cashew nuts and oil then saute 8 minutes 120deg C (or varoma in TM31) speed 1 .... MC off.

  3. Add chicken strips and saute 7 minutes 120deg C (or varoma in TM31) on Counter-clockwise operation"Counter-clockwise operation" speed 1.

  4. Add vegetable stock concentrate, capsicum, cauliflower (and any other sliced vegetables that you want to add), then continue to saute 7 minutes 120deg C (or varoma in TM31) on Counter-clockwise operation"Counter-clockwise operation" speed 2.

  5. add the oyster sauce, soy sauce & fish sauce and continue to saute 7 mins 120deg C (varoma in TM31) on Counter-clockwise operation"Counter-clockwise operation" speed 2.

  6. Pour into thermoserver, or leave in TM bowl for 10mins to rest before serving. Garnish with coriander leaves (or parsley leaves) and serve with steamed rice.

Tip

* Steam rice first and set aside in Thermoserver to keep warm.

* Can eliminate chicken and add more vegetables to make a vegetarian dish

* Can eliminate fish sauce and add double oyster sauce to compensate.

    cooked this recipe exactly as written and I also ended up with a big bowl full of mush that I had to chuck.

    Loved this dish! Very yummy! Hubby not a fan of cashews so wouldn't use as many cashews next time! Great dish!

    I did slice my chicken thickly  (as per instructions) ... or you could use chicken thigh fillet.  If chicken is slightly older  (purchased from supermarket instead of butcher) it will fall apart more. I prefer going to butcher for chicken breast.  Thank you for your message ☺ ... I love this recipe.

    House smelt awesome while cooking.  Lovely flavours & simple ingredients, could easily be a family favourite. Only problem was that Chicken pretty much fell apart, almost in a shredded fashion.  Maybe I cut into too small pieces?  Will try again with larger chicken bits. Thanks for the recipe.
