Ingredients

Roast Chicken

  • 1 Size 16-18 Whole Chicken
  • 2 sprig rosemary, Leaves only
  • 6 cloves garlic fresh
  • 1 Whole peeled lemon, (keep Rind for Chicken Rub)

Chicken Rub

  • 1 rind of lemon
  • 6 sprigs Parsley leaves
  • 1/2 teaspoon paprika
  • 1/2 teaspoon rock salt
  • 1/2 teaspoon Tarragon (fresh preferably)

Soup Mix (in Simmering Basket)

  • 1 carrot roughly chopped
  • 1 Onion roughly chopped
  • 2 stalks Celery roughly chopped
  • 1/2 teaspoon rock salt
  • 1 pinch cracked pepper
  • 1 zucchini roughly chopped

Soup

  • 100 grams ABC Noodles, (or noodles of choice)
  • 1 large portion diced roast chicken, (once Cooked)
  • 1800 grams water

Roasting Vegetables

  • 2 Carrots (preferred baking size)
  • 3 Potatoes (preferred baking size)
  • 1 Sweet Potato (preferred baking size)
  • 1/8 Pumpkin (preferred baking size)

  • 1 carrot roughly chopped
  • 1 Onion roughly chopped
  • 2 stalks Celery roughly chopped
  • 1/2 teaspoon rock salt
  • 1 pinch cracked pepper

Recipe's preparation

  1. Make sure chicken has been cleaned inside before starting.

     

    Stuff the chicken with the Rosemary, garlic and lemon and set aside in the large Varoma tray.

     

    Place all ingredients for the Chicken Rub into the bowl and chop for 3 seconds/Speed 7, scrape out and rub over chicken.

     

    Fill jug (without washing) with 1800grams of water, place Simmering basket into place with roughly chopped Soup Mix ingredients, and put Varoma in place and cook for 60 mins/Varoma/ Speed 2.

     

    Lay prepared vegetables for roasting around chicken and cook for further 15 mins/Varoma/Speed 2.

     

    Add 100g of Alphabet noodles to bowl, replace simmering basket and Varoma back into place and cook for a further 10 mins/Varoma/Counter-clockwise operation"Counter-clockwise operation" Speed 2.

     

    Once cooked, dice up a little chicken and add to the soup before serving for the kids. You can add more water to the soup if the taste is a bit strong (I usually add about a cup to 2 cups of water)

     

    Enjoy your roast chicken and veggies while the kids enjoy their Chicken Noodle soup.

This is a great recipe to cater for parents and kids seperately, but still utilising the whole Layered Cooking option. 

The chicken doesnt look pretty but tastes awesome. If you prefer a crispier skin, pop it in an oven tray in the oven 200 deg for 5-10 mins.

    This was lovely! Put chicken breast down (note for myself). Chicken was perfectly cooked and moist. We just had it straight from the thermy so the skin wasn't great. Lovely with oven roasted veges. My husband wanted some gravy, but he was the only one! Makes a lovely stock in the bowl too. I didn't make the soup though as I was pushing it for time. I had a 16 kg chicken which perfectly fit. It was enough to feed our family with a bit leftover for sandwiches.

    This was delicious! 

     

    I made this tonight for dinner and it was fantastic. We put it in the oven for 15 minutes to make the skin crispy. We just had it with salad. I will definitely be cooking this again, it's a great family meal.

    We all enjoyed the chicken noodle soup - the kids who usually refuse soup devoured two bowls!.

     

    Unfortunately we weren't too fond of the 'roast' chicken. For us it was too lemony and the lemon flavour went all through the vegetables too. The chicken was very moist.

    Nice recipe thankyou.

    I needed a broth/soup for a sick toddler and also a meal for the not sick adults so this worked perfectly. Nice base that is easy to add adaptations or change flavours with. I do like to finish my chicken in the oven for a level of crispness, but it is also perfectly fine straight from the Varoma and the moisture that it retains cooking this way is great for making it flexible enough to roast finish.
