Ingredients
You'll need:
- 300 g coconut milk
- 1 tbsp Vegetable stock paste
- 25 g olive oil
- 2 Kaffir lime leaves
- 1 clove garlic, peeled
- 2 cm fresh ginger, peeled
- 1 onion, peeled and chopped in half
- 250 g rice, rinsed
- 700 g chicken breast, cut into strips
- 500 g Vegetables, peeled into strips or chopped finely
- 1 lime
- 25 g tamari
- 20 g oyster sauce
- 15 g brown sugar
- 1 pinch dried chilli flakes
- 50 g cashew nuts
- 1 bunch fresh coriander, for serving

- Add the garlic, ginger and onion to the mixing bowl and chop for 5 Seconds/Speed 5. Scrape down from the sides of the bowl. Add the Olive oil and sauté for 2 Min /100C/ Speed 2.
- Add the coconut milk, kaffir lime leaves, 200g Water and Vegetable Stock Paste to the bowl. Insert the steaming basket and weigh rice in. Remove basket then rinse till clear then add back into the Mixing Bowl. Put the lid on the mixing bowl and set the Varoma on top. Add the chicken to the Varoma dish and cook for 10 Minutes/Varoma Temp/Speed 2.
- Add the vegetables to the Varoma tray. Cook for a further 14 Minutes / Varoma Temp/Speed 2.
- Remove the Varoma and the rice and place all into the ThermoServer to keep warm. Remove the Kaffir lime leaves from the liquid in the bottom of the mixing bowl and discard. Add the juice of 1 lime, tamari, oyster sauce, sugar, chilli (optional), cashew nuts, salt and pepper and blend for 1 Minute / Speed 9.
- Pour over the chicken and serve with the coriander.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Really delicious. I've made it twice now and both times have been great. I find my chicken always needs a few more minutes to cook (perhaps I cut too large), but otherwise foolproof.
Loved the flavour. Made a couple of alterations and added some corn flour to thicken the mixture up a bit, but loved the flavour.

There's a few bits of info missing here - when to put the rice in, a few temperatures, etc. Maybe consider editing????
I put the rice in at step 2 (read the comments after and was pleased to see that's what others chose).

Just made this for dinner for the family and it was a hit! Added the rice in step 2 as per previous comments and it turned out great, also added an extra 100g of coconut milk as that was just the size tin it came in and I had extra chicken anyway. Will surely be making this again!
I added the rice (medium grain) in step 2, and it still needed an extra 5 minutes to cook through. So i put the chicken and veges aside as they were cooked. By this point there was just enough liquid to cook the rice further. There only remained a paste for the sauce, so i added a bit extra coconut milk and another spoon of brown sugar as it was very salty. still turned out very nice though

Awesome dish! Officially our best meal cooked in the Thermomix to date! I did follow the comment and put the rice in from the start (step 2) and that was definitely for the best.
