Ingredients

  • 500 g shredded chicken, (Thermofun recipe)
  • 1 onion
  • 1 teaspoon cumin seeds
  • 2 red chillis, fresh
  • 3 cloves garlic
  • 2 cans diced tomatoes
  • 1 can red kidney beans
  • 1 can Refried beans
  • 150 g Cheddar cheese
  • 1-2 Avocados, Sliced
  • 1 package tortillas

  1. Preheat oven to 180c

    1. Prepare shredded chicken as per Thermofun's recipe (//thermofun.com/thermofun-everyday-basics-shredded-chicken/). This can be done in advance.

    2. Cut cheese into 2cm cubes and place into bowl and grate for 7sec/speed 7. Set aside.

    3. Place chillis, cumin seeds into bowl and chop  8 sec/ speed 9.

    4. Add the onion and garlic, chop 6 sec/ speed 5.

    5. Add the two tins of diced tomatoes and cook 15mins/100c/speed 2.

    6. Add the can of red kidney beans and refried beans and cook for 5mins/100c/speed 1 Counter-clockwise operation"Counter-clockwise operation" Use Spatula to incorporate if required.

    7. Pour a quarter the sauce into the oven dish.

    8. Put half the cheese and all of the shredded chicken into a bowl and combine with a quarter of the sauce.

    10. Prepare enchiladas by placing the chicken/cheese/sauce mixture and place some sliced avocado on top.  Wrap the tortilla and lay ontop of the sauce in the baking dish. Continue this until all 10 tortillas are placed in the baking dish.

    11. Pour the remaining sauce over the top of the tortillas and sprinkle with the reamining cheese.

    12. Cook in the oven for approx 12 mins or until cheese is melted.

    13. Serve with a mexican rice, cous cous, salad and or sour cream.

    This is delicious thank you. I doubled the recipe but only added one tin of kidney beans and it just fit tmrc_emoticons.;) I also added a generous shake of Mexican Chilli seasoning at the start with the chillies and it has given it decent heat! Go perfectly wth the Tequila Margarita Sorbet!!

    These are soooo yummy! I added taco seasoning tithe chicken before coming. I also made herb and garlic tortillas. Both these added just a bit more flavour, and the family loved them. Thanks for sharing the recipe

    The family loves these! It works out to approx 360 calories per enchilada, so if you are watching your waistline, not a bad meal!

    Absolutely delicious! Added sour cream to my layers before putting in oven, soooo yum! Also used leftover BBQ chicken then shredded.

    Fantastic tasting
