Ingredients
Birria Tacos - TikTok Tacos
Meat mixture
- 1000 g Chuck Steak, for slow cooking.
- 400 g liquid beef stock
- 200 g broth, Bone broth
- 200 g water, tap
- 1-2 long red chilli, i de-seeded mine.
- 2 brown onion, peeled, cut in halves.
- 1 garlic, whole head, peeled.
- 4 bay leaves
- 1 carrot, cut into chunks
- 3-4 sprigs thyme leaf, fresh
- 2 tomatoes, take out core and cut in half.
- 2 level tbsp sweet smoked paprika
- chilli flake, dried, if desired
- 2 level teaspoons ground cumin
- 2 level teaspoons Ground Coriander
- 2 level teaspoons dried oregano
To build tacos
- 8-10 tortilla
- grated cheese
- onion, diced
- other desired taco toppings
- coriander, fresh leaves, chopped up if desired
- Pickled Jalapeno Chilli, sliced

- Brown all meat in pan. Set aside.
2. Insert blade cover to Thermomix bowl
3. Add meat, onion, carrot, garlic, fresh chilli, fresh thyme, water, broth and beef stock liquid to Thermomix bowl - ensure not to go over max bowl line. Cook on Slow Cook Function (TM6) for 1hr 95deg - until all vegetables are soft.
4. Carefully take vegetables out to blend - an extra Thermomix bowl would be perfect to do this which is easiest. However if you don't have one, you will have to take all liquid, blade cover and meat out and set aside and leave the vegetables in the bowl and blend. Once complete add blade cover, meat, liquid and blended vegetable mix back into bowl and continue. Set to cook on Slow cook function again for 4hrs, 95deg.
5. Once complete - carefully remove meat in to Thermoserver and shredd with 2 forks, adding about 2-3 ladels full of liquid from Thermomix bowl . - 1. Get a fry pan nice and hot.
2. Dip torilla into liquid from bowl and add straight to fry pan and start to build taco. We placed grated cheese, beef mix and some liquid, corn kernals, onion, tomato, coriander etc.
3. Fold tortilla back over on itself - see pictures.
4. Flip tortilla to ensure you brown/harden both sides.
5. Serve with liquid to dip taco as you eat it. You could top with sprin onions or sour cream to if you might like that.

This recipe was created in a TM6 using the slow cook funtion but could be potentially done in a TM5.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
