Ingredients
Bourbon Sauce
- 1 clove garlic, peeled
- 2 cm ginger
- 4 pieces dried chillies
- 85 grams beef bone stock
- 10 drops Liquid Stevia
- 50 grams brown sugar, loosely packed
- 35 grams tomato sauce (ketchup)
- 10 grams apple cider vinegar
- 130 grams water
- 100 grams soy sauce
- 10 grams cornflour
Chicken
- 1000 grams chicken breast, diced in 2-3cm cubes
- 1-2 tablespoons olive oil

Heat oil in a skillet/fry pan and cook chicken over medium-high heat until nicely browned.
While chicken is browning, chop garlic, ginger, and chillies for 3 seconds on Speed 7. Scrape down sides and add remaining sauce ingredients and cook for 5 minutes at 100 degrees on Speed 2.
Add browned chicken pieces and any pan juices to the sauce and cook for 10 minutes at 100 degrees on "Counter-clockwise operation" Speed 1.
Tip
Serve with steamed rice (or mashed potatoes) and vegetables.
If you'd rather a thicker sauce, add a little more cornflour or a little less liquid, though it carries the 'kick' with the chillies and soaks up well with rice (or mash).
