- 2 cloves garlic, Peeled
- 2 centimetre piece ginger, Peeled
- 1 red chilli, Deseeded
- 1 onion, Peeled, cut in half
- 500 grams chicken thigh, Cut into 2cm pieces
- 30 grams extra virgin olive oil
- 2 tablespoons Vegetable stock paste
- 50 grams tomato paste
- 150 grams Pure cream OR Coconut cream

- Place garlic, ginger and chilli into mixing bowl and chop 3 seconds / speed 7. Scrape down bowl with spatula.
Add onion and chop 3 seconds / speed 5.
Add olive oil and sautée 3 minutes / varoma / speed 1.
Add chicken and stock and cook 5 minutes / 100 degrees / "Counter-clockwise operation" / speed 1.
Add spices and cook 3 minutes / 100 degrees / "Counter-clockwise operation" / speed 1 / with simmering basket on lid instead of MC.
Add tomato paste and cook 5 minutes / 100 degrees / "Counter-clockwise operation" / speed 1 / with simmering basket on lid instead of MC.
Add cream and cook 10 minutes / 100 degrees / "Counter-clockwise operation" / speed 1.
Tip
Place cooked butter chicken in Thermoserver while you prepare your rice. Sprinkle with fresh parsley if desired. Beautiful served with garlic rice, steamed vegetables and garlic naan bread!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Fabz:By...::cutting bigger pieces of chicken, reduce speed to stir speed, and combine spices with chicken reducing cooking time.
mich99: can I ask how you doubled it? Did you cook the chicken separately? I have tried to double the recipe but it never works quite right for me.
Made double of all quantities (because we like a lot of sauce!), and used about 700g chicken in total.
Finished taste was a little bland... but after adding about 30g rock sugar at the end it was superb 😁.
Kids loved it so will definitely make again!

I love this recipe! sooo yummy. I'm vego so I followed all instructions except adding the chicken and then used coconut milk, eggplant and mushrooms in the last 10 minutes. Delicious!
