Ingredients

all:

  • 1.5 litres water
  • 3 star anise
  • peel of 1 orange
  • 1 tablespoon white vinegar
  • 2 cinnamon quills
  • 6 cloves
  • 6 dried juniper berries
  • 6 Peppercorns
  • 2 x 500g Pieces Pork Belly
  • 2 tablespoon kecap manis
  • 4 tablespoon brown sugar
  • salt

Recipe's preparation

  1. -Put water into bowl. Insert simmering basket.

    -Put Star Anise, Orange Peel, White Vinegar, Cinnamon Sticks, Cloves, Juniper Berries and Peppercorns into Simmering basket.

    -Put lid on, and varoma into place.

    -Place Pork Belly, skin side down into varoma, one in the dish, one on the tray. Rub Kecap Manis onto the top side of each piece. Make sure there are still holes uncovered in the dish, to allow the steam to work its' magic!

    -Cook 90 mins/varoma/spd 3.

    -Meanwhile, heat oven to 225C.

    -Discard contents of simmering basket. Keep steaming liquid in TM bowl.

    -Put pork, skin side up onto an oven tray. Salt skin and cook for 25 minutes or until skin is crackly.

    -Add Brown Sugar to steaming liquid and cook 25 mins/80/spd 3 with MC off.

    -Cut into portions (cutting with the skin down is easiest) and serve with sauce.

    Steph this was absolutely beautiful!! I was all out of Kecap Manis so used regular soy sauce on the pork and I left out the sugar tooso that I could make it low carb for me. It didn’t matter, was delicious! Goes to show how versatile the recipe is!!! The sauce is totally drinkable, and the pork cooked perfectly. Thank you for an incredible recipe !

    OMG made this tonight. Was amazing. I never had juniper berries or cloves and added cracked pepper as couldn't get peppercorns out. Sauce was divine and the pork was delicious. Favourite all round. Thank you x

    Smile Extremely pleased with the way this turned out after putting pork under grill for 5 minutes to finish off as oven was taking too long for pork to crisp up. Served with cauliflower rice, steamed rice & pak choy, delicious. Great recipe thank you.

    I made this as the recipe instructed and served on a bed of sweet potato with green beans and pak choi. Wife was absolutely delighted with flavour and presentation.

    Very Nice !!

    I added 1/2 the Kecap Manis to the stock, 

    A refreshing addition to the plate was a spoonful of the fresh " Beetroot, Carrot & Corriander " salad , laid the cut side of the pork on it with the sauce in a side ramekin  so you could drizzle as little or as lot as your heart desires , 

    With some home cut potato wedges  mmmm !!

    OMG this is AMAZING!

    This dish is very easy to make and just as easy to eat. Made it for the first time with a little bit of aprehension as I thought it would be very difficult. This was such a hit that I think it will be a regular dish from now on. Thanks for the recipe share.
