Ingredients

Chicken Chow Mein

  • 1 brown onion, small, sliced
  • 1 carrot, julienned
  • 1/2 red capsicum, sliced
  • 1/2 zucchini, sliced
  • (optional) red chilli, sliced
  • 1 package Chicken Mince (500g)
  • 1 tsp keen curry powder
  • 1 tbsp EDC Vegetable Stock
  • 420 grams Water (approx), boiling
  • 150 grams Chinese cabbage, thinly sliced
  • 4-6 button mushroom, sliced
  • 1 package Chinese egg noodles, OR Hokkien, Rice, whatever you have on hand.

Recipe's preparation

  1. Add pre-sliced onion, carrot, red capsicum and zucchini (and chilli if using) into TMX and saute for 3 minutes, 100deg, speed 1. 

    (You may place these ingredients in to TMX and chop for 5 seconds on speed 6 instead of slicing them all by hand, but I prefer to pre-cut mine to allow for some texture in the dish).

     

  2. Add chicken mince and cook for 10 minutes on Varoma Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" .

    While this is simmering place noodles of choice in separate bowl with hot water to soften them, drain, then set aside. 

     

     

  3. Add drained noodles, curry powder, EDC stock, cabbage, mushrooms and 420g water (or less depending on how much 'juice' you prefer) and cook for 5 minutes on Varoma Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

     

     

  4. Transfer into a thermoserver and stir to evenly distribute before serving. Serve with a splash of soy sauce and some sprigs of coriander if you have on hand. 

     

Tip

***This dish is reasonably adapted in order to be child/toddler friendly. You could incorporate more spice in at step 3 if you like- i would recommend ginger, garlic, oyster sauce or soy sauce, but we think that just the curry and stock work a treat.** 

**420g water is also an optional amount, we like to have a bit of broth with ours, you can halve the water content if this is not to your taste.**

    I made this for the first time tonight, and we really liked the flavours, although we would prefer our noodles more in tact. So next time rather than adding the noodles to the bowl I think I will heat the noddles in the thermoserver, then mix everything together in the thermoserver prior to serving. I also only used 200g of water, which we found to be the perfect amount. We will definitely have this again. Thank you for a lovely recipe.

     Very nice. I added extra cabbage, garlic cloves, soy sauce & extra curry powder. Had it with steamed snow peas & broccoli. Mmmm

    Oh my this was seriously amazing; I could not stop eating and it was super healthy!! I will definintely do this again but without the chilli; it was a little hot but yet still delicious.  Thank you so much for sharing

    Yum, I liked it.  Also used half the water as per previous suggestions.  And made my own chicken mince from chicken breast fillets.
