Ingredients

  • Ingredients - Pie Filling
  • 75 g leek, (cut into few pieces)
  • 150 g carrot, (peel & rough chop)
  • 150 g sweet potato, (peel & rough chop)
  • 150 g zucchini, (rough chop)
  • 75 g Celery (rough chop)
  • 50 g olive oil
  • 500 g chicken, Thigh Fillet (diced)
  • 1 tablespoon TM Vege Stock
  • 100 ml Water
  • 2 teaspoons mixed herbs
  • 75 ml cream (or skinny evap milk)
  • 1 tablespoonof corn flour
  • 1 MC frozen peas
  • 1 MC frozen corn
  • Ingredients – Topping
  • 1 kg Potatoes (peeled and rough chopped)
  • 250 ml milk
  • Salt
  • Grated Cheese (grate first and set aside)

Recipe's preparation

  1. 1.       Place Leek, Carrot, Sweet Potato in bowl – 3 sec speed 5

    2.       Add Zucchini & Celery – 2 sec speed 5

    3.       Add Olive Oil – scrape sides and cook 3 mins, 100 degrees speed 1

    4.       Add Chicken Thigh  and cook 2 mins, 100 degrees, Reverse, speed 1

    5.       Add Stock, Water, Cream and mixed herbs and cook for 15mins, 100 degrees, reverse, speed 1

    6.       Add corn flour, peas, corn and cook for 3 mins, Varoma, Reverse, speed soft – MC off

    7.       Add to pie dish while you make potato mash for topping (I usually do one larger one and several small ones in ramekins or all ramekins)

    8.       Add Potatos, milk and sale to bowl and cook for 18mins, 100 degrees speed 1

    9.       Check cooked and add butterfly and whip for on speed 3 for 20 to 30 seconds

    10.   Add to top of filling and cover with grated cheese

    11.   Bake in oven for 20 minutes at around 200 degrees (until cheese browns on top)

     

Tip

Freeze well and make great individual pies in ramiken dishes.

    Made this last night. I used the vegies I had in my crisper. Used milk instead of cream as I didn't have any. I honestly didn't think anyone would eat it. But, to my surprise, everyone did. Including my vegie hating 1 year old. I will definitely make again with the right ingredients to see what it was meant to be like. tmrc_emoticons.)

    Yummy. Topped it with puff pastry rather than potato. The filling was a good dinner for my 9 month old, so the whole family was happy!

    We loved this dish. I had 3 boys (11, 9, 7yrs old) all ask for 2nds. Next time I'd put it in a smaller, deeper dish so the potato was thicker on top!

    Delicious, will definitely make again.

    I made the short crust pastry from the Everyday TM cookbook, and baked for 15 minutes before adding the pie mix.

    So good!
