Ingredients

Crumb

  • 100 grams almonds
  • 1 teaspoons Oregano
  • 1 teaspoons Onion powder
  • 1 teaspoons sweet paprika
  • 1 pinches Salt and pepper

Herbed Garlic

  • 100 grams Butter
  • 2 cloves garlic
  • 1 Parsley or Corinader, Handful
  • 1 basil, Handful
  • 1 sprigs Thyme

Chicken

  • 500 grams chicken breast, 2 breast usually
  • 1 egg
  • 100 grams parmesan

Recipe's preparation

  1. 1. Preheat over to 180 degrees
    2. Put raw almonds into mixer bowl, mill for 5 sec/speed 9/MC on. Set aside and stir through spices, salt, and pepper.
    3. Mill parmesan for 10 sec/speed 9/MC on. Set aside.
    4. Put herbed butter ingredients into mixer bowl, blend for 40 sec/speed 5/MC on. You may need to scrape down sides mid way. Set aside.
    5. Put chicken ingredients and 20 g of the reserved crumb mixture into mixer bowl. Mince for 40 sec/speed 9/MC on.
    6. Divide chicken mixture into 4 or 6 round balls. Wet hands help with this.
    7. Take one of the balls and flatten it out to the size of your palm. Place ¼th or ⅙th of the herbed garlic butter in the centre. Fold chicken mixture around the butter. Coat the chicken liberally in the reserved crumb mixture and set aside. Repeat the process for the remaining chicken.

    Two Options: Either pan fry and then bake or straight bake

    8. Fry lightly for a few minutes each side with a little oil. Transfer to over for 10 minutes or until done. ALTERNATIVLY
    9. Bake for 20-30 minutes in the oven depending on size

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
