Ingredients

  • 250 grams Reduced fat ricotta
  • 30 gram parmesan
  • 250 grams Frozen spinach
  • 1 medium onion
  • 800 grams mushrooms
  • 2 cloves garlic
  • 400g can tomatoes
  • 2 medium tomatoes
  • 1 Medium zucchinis
  • 1 medium carrots
  • 1 medium egg
  • Fresh lasagna sheets
  • olive oil
  • pinch Nutmeg
  • 220 grams lean mince lamb

Recipe's preparation

  1. 1.     Preheat oven to 180c

    2.     Grate parmesan 10 sec on speed 9 and then set to the side

    3.     Add ricotta, spinach, egg, nutmeg and HALF the Parmesan to TM bowl. 10 seconds on speed 6. Set to the side.

    4.     Chop zucchini, carrot and tomato for 4 seconds on speed 4 – set to side

    5.     Add onion and garlic and chop on speed 7 for 3 seconds

    6.     Add mushrooms and chop for 4 seconds on speed 4

    7.     Add oil and cook for 5 minutes on 100C on reverse speed 1

    8.     Add mince and cook for a further 4 minutes taking the speed back to soft

    9.     Add canned tomatoes and pre-chopped zucchini mix. Stir in with spatula and then cook on 100C for 10 minutes on reverse speed 1

    10.In a lasagna dish

    a.     Add a thin layer of meat mixture

    b.     Top with a lasagna sheet (trimming to fit)

    c.      Spread half the remaining meat

    d.     Top with another lasagna sheet (trimming to fit)

    e.     Add remaining meat mixture

    f.      Add final lasagna sheet

    g.     Spread over the spinach mix

    h.     Sprinkle with remaining parmesan

    11.Bake for 50 minutes or until golden brown.

Tip

you may chose to layer the spinach mix with the meat mixture instead of all on top.

    Yes too much liquid as I used fresh tomatoes too. I added 100grms of tomato paste to the last stage of cooking. Looking good in the oven as we speak - can't wait to eat it...

    Really enjoyed it. Didn't have any tinned tomatoes in the pantry so made it with 4 fresh ones. Was a bit of liquid but I strained some off before layering lasagna. Addded extra cheddar and parmesan too. Lovely flavour, spinach and ricotta layer was delicious and crisped nicely. Will make it again and next time with the tinned tomatoes.

    I found there to be too much liquid. Next time I would leave the whole tomatoes out!
