Ingredients

  • 1 tsp rock salt
  • 1 tsp Peppercorns
  • 2 tsp paprika
  • 2 tsp Dried Shallots
  • 150 g onion
  • 2 cloves garlic
  • 20 g olive oil
  • 400 g crushed tomatoes
  • 400 g coconut milk
  • 500g-700g of Mixed Vegetables, Sweet Potatoes , Carrots , Pumpkin , Broccoli , Cauliflower.
  • 1 Kilo of Diced Gravy Beef

Recipe's preparation

    Coconut Beef Casserole
  1. Add Salt 1tsp , Peppercorns 1tsp , Paprika 2tsp and Dried Shallots 2tsp to bowl and blend Speed 8 / 10 Seconds.

     

    Add Onions and Garlic to bowl and chop Speed 5 / 3 Seconds scrape down bowl.

     

    Add oil 20g to bowl and Cook Reverse No counter-clockwise operation"No counter-clockwise operation" Speed 1 / Temp 100 / 3 Minutes.

     

    Add Crushed Tomatoes 400g and Coconut Milk 400g to bowl and cook 3 Minutes / Temp 100  / ReverseNo counter-clockwise operation"No counter-clockwise operation" Speed 1

     

     

    Add your 1 Kilo of diced Beef to a casserole dish, pour sauce over the top and stir through. Cover with a fitted lid and place in oven for 2 hours.

     

    Remove dish from oven and place in vegetables, stir so they are covered by the sauce. Return to oven for 30 minutes - 1 hour until vegetable are soft. 

     

    Serve with Rice or Bread.

    Made this last night but I wasn't a huge fan. It was lacking flavour. Don't think I'll make it again.

    @FarmerTess I'm a newbie with the thermie. When you do it 50 mins in the thermie - can you please tell me what settings and did you throw meat and veg in together at the same time. I'd much rather do the thermie over the oven.
