Ingredients

Coconut Lime Chilli Chicken with Veggie Rice

  • 500 grams chicken breast, (Cut into thick strips, 1.5cm x 7cm)
  • 250 grams basmati rice
  • 500 grams water, Pre-boiled
  • 1 lime
  • 1 zucchini
  • 1 carrot
  • 1 teaspoon raw sugar
  • 400 grams coconut milk
  • 1 tablespoon chilli flakes
  • 50 grams Cashews
  • 1 tablespoon plain flour
  • coconut flakes, For garnishing

Recipe's preparation

  1. Place carrot and zucchini into jug. Turn timer to 3 secs, sp 6. Empty jug and place mixture into Thermoserver.

  2. Weigh rice into simmering basket.


    Pour water and coconut milk over rice in the simmering basket into jug.

  3. Add chicken tenderloins to varoma tray. Place chilli flakes, lime slices and coconut flakes around chicken to infuse the flavour. Turn time selector to 20 mins, Varoma temperature, sp 3.

  4. Remove Varoma tray with cooked chicken. Empty cooked rice into Thermoserver and mix with carrot and zucchini.

  5. Add plain flour and cashews to the left over coconut milk and water mixture and blitz for 7 secs on sp 10.

  6. Cook 3 mins, 98 degrees sp 2.





    Serve and enjoy.

    thanks for posting
    just a couple of questions

    when do you add the sugar
    what do you do with the sauce ? It’s not obvious In the picture . I served it over the chicken and rice but have no use of that’s correct
