Ingredients

Coconut Saffron Chicken Curry

  • 1 brown onion, peeled, and cut in half
  • 3 cloves garlic, peeled
  • 1/2 red capsicum, deseeded and roughly chopped
  • 1 red chilli, deseeded and roughly chopped
  • 1/2 heaped teaspoon saffron
  • 3 sprigs Thyme, leaves only
  • 30 grams olive oil
  • 500 grams chicken thighs, diced
  • 250 grams cherry tomatoes
  • 400 grams coconut cream

    Coconut Saffron Chicken Curry
  1. 1. Place onion, garlic, capsicum and chilli in TM bowl. Chop:


    3 seconds/Speed 7

  2. 2. Add saffron, thyme and olive oil. Saute :


    3 minutes / 100* / Speed 2

  3. 3. Add chicken and tomatoes. Cook :


    3 minutes / 100* / counter-clockwise operation / Speed 2

  4. 4. Add coconut cream. Cook :


    7 minutes / 100* / counter-clockwise operation / Speed 2

  5. 5. Serve with brown and and side of coleslaw or steamed greens.

    Thanks for a great recipe. Our entire family love it. We serve it over rice noodles and it becomes very similar to a Burmese dish which is my husband's favourite. It is quick and easy. Yum
