Ingredients
Coconut Saffron Chicken Curry
- 1 brown onion, peeled, and cut in half
- 3 cloves garlic, peeled
- 1/2 red capsicum, deseeded and roughly chopped
- 1 red chilli, deseeded and roughly chopped
- 1/2 heaped teaspoon saffron
- 3 sprigs Thyme, leaves only
- 30 grams olive oil
- 500 grams chicken thighs, diced
- 250 grams cherry tomatoes
- 400 grams coconut cream

1. Place onion, garlic, capsicum and chilli in TM bowl. Chop:
3 seconds/Speed 7
2. Add saffron, thyme and olive oil. Saute :
3 minutes / 100* / Speed 2
3. Add chicken and tomatoes. Cook :
3 minutes / 100* / / Speed 2
4. Add coconut cream. Cook :
7 minutes / 100* / / Speed 2
5. Serve with brown and and side of coleslaw or steamed greens.

Thanks for a great recipe. Our entire family love it. We serve it over rice noodles and it becomes very similar to a Burmese dish which is my husband's favourite. It is quick and easy. Yum
