Creamy Raw Pasta - AIP/Vegan Friendly

  • 2 Medium Sized Zucchinis, Zoodled
  • 1 ripe avocado
  • 1 handful chives
  • 6 Basil leaves
  • 1 tablespoons nutritional yeast
  • 1 tablespoons shelled pistachios
  • 1 tablespoons pine nuts
  • 3 tablespoons water
  • 3 tablespoons olive oil
  • 250 g diced chicken breast, Optional
  • 3 Diced Bacon Rashers, Optional
  • salt, To Taste
  • pepper, To Taste

Recipe's preparation

  1. Throughly wash the zucchinis and put them through a zoodler (to make you noodles) - Put aside
  2. Place Avocado, Chives, Basil, Nutritional Yeast. Pistachios, Pine Nuts, Wate & Olive Oil into TM bowl Turbo 2 Secs, srape down bowl and repeat (You want this to be a thick cream consistency.) Taste the sauce and season accordingly.
  3. IF ADDING - Cook your chicken and bacon (I use the stove top)
  4. Combine everything together and enjoy!

Tip

If you arent adding meat would like this as a warm version, quickly blanch your noodles to heat them through, before adding the sauce.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Avo pasta sauce: YUM!! It was so quick, so easy, and tasted so good! Very creamy, almost like a nutty guacamole. Was eating it straight out of the bowl and literally licked the bowl clean!

    Made slight adjustments: added a clove of garlic, a squeeze of lemon juice (for flavour as well as preserve green colour of final product), about/slightly less than half a teaspoon salt and a few sprinkles of dry Italian herb seasoning. Also substituted the chives and basil leaves with half a bunch of spring onions (green parts only, roughly chopped) because that's all I had. I did not add any meat -- the sauce was so good as it is, there is simply no need for any meat (plus, vegan version helps planet earth so much!)

    I had this sauce over kelp noodles (to which I added a small sprinkle of sesame oil because it just smells so nice!). Combined well and left to "marinate" for 10-15 minutes (which softens the kelp noodles). Divine and quick, super healthy meal. Thank you for the recipe!
