Ingredients

  • 300 g Aborio Rice
  • 2 sprig Sage and parsely
  • 1 Brown Onion Halved
  • 2-3 clove garlic
  • 30 grams olive oil, (Butter could be used instead)
  • 1 carrot, washed not peeled
  • 1 stick Celery
  • 4-6 mushrooms
  • 40-50 grams frozen peas
  • Any other veggies of choice, (capsicum, zucchini
  • 400-500 grams pork cut into 3cm cubes
  • 400 gram can of diced tomatoes
  • 1 teaspoon Stock Concentrate
  • 300 grams water
  • 100 grams tomato paste
  • 1 teaspoon of chilli flakes, or to taste
  • 50-100 grams White wine or 15 white wine vinegar
  • 100 grams of cream
  • Parmesan to serve

Recipe's preparation

  1. Place sage, parsley, onion and garlic into mixing bowl and chop 3 sec/speed 7.

     

    Scrape down sides of bowl.

     

    Add oil and saute 3 min/Varoma/speed 1.

     

    Add carrot, celery and mushroom or vegetables of choice and chop 3 sec/speed 5 Speed will vary depending on your preference of chunky vegetables. Higher speed (SP7 for coarse, or SP3-5 for more chunky).

     

    Insert butterfly. Add rice, pork, tomatoes, water, stock, tomato paste, white wine and chilli flakes.

     

    Cook 17 min/100/Counter-clockwise operation"Counter-clockwise operation" /speed 1.

     

    Remove butterfly. Add cream and peas, if using, and cook 4 min/100/Counter-clockwise operation"Counter-clockwise operation" /speed 1

     

    Pour into ThermoServer , season with S&Pto taste and stir through Parmesan.

     

    Allow to rest for 5 minutes before serving.

Tip

This receipe is best with dry white wine instead of the vinegar. If you do use the white wine, perhaps use less water. I used white wine vinegar as its usually always in the pantry and I dont mind the sweet vinergary taste.

Ive been making this for years, but still trying the get the thermomix conversion right.

I always try to jam pack our meals with veggies. I love the crunch of the celery and often hand chop to chunkier bits. Many people dont like celery I but I think it goes well with the pork.Use whatever veggies you like.
