Ingredients

Creamy Tomato and Chicken Pasta (gluten free)

  • 1 onion, (Halved)
  • 3 garlic cloves, (Peeled)
  • 1/2 red capsicum, (De-Seeded)
  • 2 Zuchinnis, (Roughly Chopped)
  • 40 g olive oil
  • 400 g Can Crushed Tomaos
  • 300g water
  • 200 g Thickened or Pure Cream
  • 20 g Vege Stock Concentrate
  • 250g San Remo Gluten Free Egg Pasta Nests
  • 300 g chicken thighs, (Chopped 3cm Chunks)

Recipe's preparation

    Creamy Tomato and Chicken Pasta (Gluten Free)
  1. Place the onion and garlic into the mixing bowl and chop for 3 Sec / Speed 7. Scrape down sides of the bowl.

     

    Add capsicum and zuchinni and chop 3 sec / speed 5. Scrape down sides of the bowl.

     

    Add oil and saute 3 min / Varoma / Speed 1

     

    Add tomatoes, water, cream and stock and cook for 10 Minutes / 100 Degrees / Speed 1

     

    Add the fettuccine pasta, using the spatula to ensure the pasta is submerged in the sauce, place the chicken thigh on top of the pasta and cook for 8 minutes / 100 Degrees / Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

Tip

Can be made using regular, not Gluten Free Fettuccine

This is my take on the Creamy Tomato and Salami fettuccine from the EDC

Add some parmeasan, Baby spinach once it has been cooked

Add some Chilli to the First Step for added Flavour

    Nice. Thanks for the recipe. I doubled it, cooked the chicken in the varoma and the pasta in a separate pot. Combined it all before serving. Everyone enjoyed it

    4 kid approved, skipped the veges and added frozen peas and corn with pasta (needed extra 4 mins) and cheese at the end. Really tasty sauce thankyou! Easily be doubled?

    Creamy tomato and chicken pasta, thanks for sharing this recipe.  I too added some crispy bacon, sundried tomatoes, salt & pepper.  It was delecious, next time were going to try it with muscles or prawns.  It's a very versitle dish. tmrc_emoticons.)

    This is one of my weekly 'go to' dinners. I add carrot and mushrooms at the chopping stage, add bacon for the last 10 minutes along with sun dried tomatoes. I also use spiral pasta as it's a favorite with the kids. This is a winner with all the family. Thanks for the recipe! Big Smile
