Ingredients

Creamy chicken, bacon, mushroom & veggie pie filling

  • 2 cloves garlic
  • 1 leek, large, white part only, chopped roughly 3cm pieces
  • 1/2 brown onion, halved
  • 25 grams olive oil
  • 4 streaky bacon rashers, (about 130g), finely diced
  • 20 grams Butter
  • 1 zucchini, finely diced
  • 1 carrot, finely diced
  • 600-700 grams chicken breast, (about 2 large chicken breasts), cubed (I did about 2cm cubed size)
  • 6 button mushrooms, sliced
  • 200 grams pure cream
  • 40-50 g Vegetable or Chicken Stock Paste
  • 2 heaped tablespoon cornflour, mixed in a small bowl with 2 tablespoons of cold water

Recipe's preparation

    Method
  1. Closed lid"Closed lid" 1. Place garlic, leek and onion into mixing bowl and chop 4 seconds/speed 5.

    2. Add olive oil and bacon and cook 5 mins/100C/speed 1. Scrape down sides.

    3. Add butter, zucchini and carrot and cook 3 mins/100C/speed 1. Scrape down sides if needed.

    4. Add chicken, mushrooms, cream, vegetable stock paste and cornflour water and cook 20 mins/100C/ Counter-clockwise operation"Counter-clockwise operation" /speed 0.5 with measuring cup (MC) off and simmering basket on top of lid instead.

    ** If filling not as thick as you like, mix 1 tablespoon cornflour with a little water and add to mixing bowl. Cook for 1 minute, 100 degrees, reverse speed 2 for 1 minute. I do this for our pies and often will just add 3 tablespoons to begin with.

    ** I also taste test and see if needs extra teaspoon of stock paste. If yes, add and stir through with spatula.

    Note: Filling with thicken as cooling. To cool quicker, remove filling from the mixing bowl and put in another dish to finish cooling.

    Enjoy! tmrc_emoticons.) Perfect as a pie filling for a family pie or individual pies in a pie maker. I use puff pastry for both the top and bottom of a pie when I make them in a pie maker. The filling is also great in a pasta bake or on pasta, rice or mashed potato. You could also make a large pie or mini pot pies in ramekins with pastry or mash (potato/sweet potato/cauliflower/pumpkin etc) on top. Cheese is nice on the mash too 😉 I like to add grated cheese on top of the pie filling before I put the top pastry on. So good!!!

Tip

Tips:

    Very delicious pie filling .
    Made pies for dinner tonight and the family absolutely loved it.
    Will use leftover filling to make pasta bake for tomorrow nights dinner, like you suggested. Looking forward to tomorrow dinner !!

    Why did mine turn out like a very thick soup? Used chicken thigh but otherwise followed the recipe. i had to add some diced cooked chicken so my pies had some 'content'. I'm just a new thermo user so still learning.

    I threw in the zucchini and carrot with the leek, garlic and onion to hide the veggies from the family.

    Delicious! I used large muffin tins, puff pastry and made pies with this mixture! Yum! I used chicken tender loins, but I only had about 500 g. I reduced the cream to 140 g, I only had chicken stock paste and halved the quantity. Totes delicious and I will make again! Many thanks for the recipe 💕🧑🏼‍🍳💕
