Ingredients

Apricot Filling

  • 1 lemon, rind of only
  • 75 grams dried apricots
  • 1 stick Celery, cut into chunks
  • 140 grams rice, cooked and cold
  • 10 grams curry powder, or to taste
  • 1 egg

Chicken Farce

  • 2 cloves garlic
  • 1 onion, small
  • 500 grams chicken breast fillets, skinless, cubed
  • 2 tablespoons sweet fruit chutney
  • 1 egg
  • sea salt & pepper to taste

Terrine Wrap

  • 8 slices proscuitto, or bacon
  • 3 bay leaves, fresh, (or dried if fresh unavailable)
  • 750 grams water

Curry Mayonnaise

  • 1 clove garlic
  • 2 egg yolks, at room temperature
  • 5 grams curry powder, or to taste
  • 1 tablespoon apple cider vinergar, or lemmon juice
  • sea salt & pepper to taste
  • 100 grams peanut, grapeseed or rice bran oil, (rice bran recommended)
  • 100 grams light cream
  • 1 teaspoon Worcestershire sauce

Recipe's preparation

    Apricot Filling
  1. Place lemon rind and apricots in TM bowl and chop for 6 seconds on Speed 7.

  2. Place celery in TM bowl and chop for 4 seconds on Speed 6.

  3. Add rice, cuury powder and egg and mix for 15 seconds on Reverse + Speed 1.

  4. Set aside.

  5. Chicken Farce
  6. Place garlic and onion in TM bowl and chop for 5 seconds on Speed 5.

  7. Place chicken in TM bowl, set dial to closed lid position and pulse on Turbo several times to mince.

  8. Add chutney, egg, salt and pepper and mix for 20 seconds on Reverse + Speed 1.

  9. Assembly
  10. Line a loaf tin with foil, leaving enough to generously overlap.

  11. Lay bay leaves along base of tin, line with the proscuitto (if using bacon, remove rind first), slightly overlapping each piece.

  12. Press half the Apricot Filling over base, then press half the Chicken Farce over top, repeat layering.

  13. Fold proscuitto ends over top.

  14. Remove from tin and wrap completely in overlapping foil.

  15. Place water in TM bowl. Place wrapped terrine in Varoma receptacle and cover with lid. Place Varoma into position and cook for40 minutes at Varoma temperature on Speed 2.

  16. Allow to cool and refridgerate overnight.


    Serve with Curry Mayonnaise.

  17. Curry Mayonnaise
  18. Place garlic in TM bowl and chop for 3 seconds on Speed 7.

  19. Insert Butterfly. Place egg yolks, curry powder, vinegar or lemon juice, salt & pepper into TM bowl. Mix for 10 seconds on Speed 4.

  20. With blades rotating on Speed 4 and MC in place, slowly drizzle the oil onto the lid. Add the oil at a steady pace. Once oil is incorporated, add cream and Worcestershire Sauce and mix for 10 seconds on Speed 4.
