Ingredients
Easy Peasy Satay Chicken
- 1 onion, halved
- 2 garlic cloves
- 1 carrot, peeled and roughly chopped
- 2 level teaspoons curry powder
- 25 grams Vegetable stock paste, I use my TM Vegetable Stock Paste
- 35 grams Dijon mustard, (you can sub for wholegrain mustard or mild english mustard)
- 20 grams extra virgin olive oil
- 40 grams honey
- 260 grams coconut cream, canned
- 120 grams Peanut Butter, (smooth or crunchy)
- 500 grams chicken breast fillet, diced into 3cms

- Place onion, garlic and carrot (roughly chopped) into bowl"Closed lid" , chop for 4 sec, speed 6 with measuring cup on.
- Scrape the sides of the bowl"Closed lid" and add in Olive oil and then saute onion and garlic for 5 minutes, 120°C degrees, speed 1, Measuring cup on.
- Add the rest of the ingredients into your bowl "Closed lid" . I added the diced chicken in last and cook for 25mins, 100°C on 0.5"Gentle stir setting" speed on reverse "Counter-clockwise operation" with MC off.
- Once it is cooked, place in a Thermoserver or serve immediately with a side of rice.

Tip
This recipe freezes well and is a great easy meal that my whole family enjoy (even my fussy kids).
If you wanted to add a bag of mixed stir fry vegetables you can do this in step 3 and you may need to add an extra 5 mins to the cooking time.
I use smooth peanut butter, but you can use crunchy.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
