Ingredients

coconut milk

  • 50g Desiccated coconut
  • 500g cooled, boiled water

Chicken, Veggies and Rice

  • 1 chicken breast, sliced thinly
  • 1 cup Jasmine rice
  • 2 carrots, peeled, sliced on diagonal
  • 1 shallot, sliced into rounds
  • 2 tsp Minced garlic, heaped
  • 1 tbsp semi dried ginger
  • 1 qauter wombok cabbage, roughly chopped, try not to use to much of the white bit
  • 4 large broccoli florets, roughly chopped
  • 1 heaped teaspoon linghams Malaysian Lemongrass Curry Paste
  • soy sauce, to taste
  • oyster sauce, to taste
  • lime juice, to taste

Recipe's preparation

    coconut milk
  1. Add coconut and water to bowl. 1min, speed 10. Scrape down sides and repeat.

    Add additional water to bowl to make up 1 litre

  2. Chicken, Veggies and Rice
  3. Place rice in basket, MC in mixing bowl lid. 20mins, 100deg, speed2. 

    Meanwhile, place chicken slices into Varoma dish, add in garlic and the curry paste, mix with spatula and make sure chicken slices are well coated. Place veggies onto Varoma tray, sprinkle over ginger. 

  4. When 14 minutes of cooking is left, position varoma, adjust temp to varoma. 

  5. When 2 minutes cooking time remaining,  remove veggies and place into server. 

     

  6. When finished place rice into separate server, place chicken into server with veggies. 

    Drizzle over soy, oyster sauce, lime juice and corriander, combine with spatula.

     

  7. Shape rice into a dome, serve with chicken and the veggies and enjoy!!

    The nearest shop selling linghams Malaysian Lemongrass Curry Paste is over 4 hours drive away (approximately 400km away)! Any suggestions of what to substitute?
