Ingredients
Healthy Thai Chicken Patties
- 1 Red onion, quartered
- 2 cloves garlic
- 2cm pieces fresh ginger, roughly chopped
- 1 long red or green chilli, roughly chopped, (deseeded if desired for less heat)
- 6 stems coriander, (stems and leaves)
- 2 teaspoons fish sauce
- 1 tablespoons yellow, red or green curry paste
- 2 teaspoons brown sugar, (optional)
- 500g grams chicken breast fillet, (frozen for 1 hour and cut into large cubes)
- 1/2 cup finely sliced green beans

- Place onion, garlic, ginger, chilli and coriander into the TM bowl. Chop 5 seconds, Speed 5. Scrape down the sides of bowl.
- Add the fish sauce, curry paste of choice, brown sugar (if using) and the cubed chicken (which is partially frozen) to the TM bowl. Chop 8-10 seconds, Speed 8. Check the consistency of the chicken and process for a few more seconds if required. (I did not need to do this).
- Add the green beans and fold through with a spatula until combined. The mix will be quite soft but still shapeable. Using lightly wet hands, shape the mixture into 4 large or 6 smaller patties. Place directly onto a baking tray lined with baking paper or place into a lined air fryer basket.
- Bake the patties in a 200C oven or air-fryer for 18-22 minutes or until golden and cooked through, turning hafway through cooking time.
- Serve the patties hot, warm or cold. Ideas on how to serve: on a wholemeal bun with salad, with steamed vegetables or sliced and put through a Thai style salad (see below).
- OPTIONAL THAI STYLE SALAD: To make salad, combine 4 cups finely shredded Chinese cabbage, 1 each julienned carrot and long red chilli, 1 halved and thinly sliced Lebanese cucumber, 1/2 cup each mint and coriander leaves, and 2 tablespoons bottled Thai style salad dressing in a bowl and toss to combine. Add a sliced chicken pattie and enjoy

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
