Ingredients

Spices

  • 1/2 teaspoon cumin
  • 1 teaspoon corriander
  • 1 teaspoon tumeric
  • 1 teaspoon cinnamon
  • 2 teaspoons sweet paprika
  • 75 g plain yoghurt
  • 1/2 tsp ground cardamon

Butter chicken

  • 2 cloves garlic, Peeled
  • 2 centimetre piece ginger, Peeled
  • 1 red chilli, or 1 tspn chilli flakes
  • 1 onion, Peeled, cut in half
  • 600 grams chicken thigh, Cut into 2cm pieces
  • 30 grams extra virgin olive oil
  • 2 tsp vegetable stock powder
  • 50 grams tomato paste
  • 100 grams Pure cream OR Coconut cream

Recipe's preparation

  1. Mix spice mix with yoghurt. Chop chicken and marinate in yoghurt mix for 1 hour.

    Place garlic, ginger and chilli into mixing bowl and chop 3 seconds / speed 7. Scrape down bowl with spatula.
    Add onion and chop 3 seconds / speed 5.

    Add olive oil and sautée 3 minutes / varoma / speed 1.

    Add marinated chicken, tomato paste and stock powder and cook 20 minutes / 100 degrees / Counter-clockwise operation"Counter-clockwise operation" / speed 1.

    Add cream and cook 5 minutes / 100 degrees / Counter-clockwise operation"Counter-clockwise operation" / speed 1.

Tip

Place cooked butter chicken in Thermoserver while you prepare your rice. Sprinkle with fresh parsley/coriander if desired. Beautiful served with steamed rice, and saag aloo on the side.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     My very sceptical adult son told me that he doesn't like butter chicken because it doesn't have enough flavour. Well, this recipe has certainly changed his mind and he actually told me several times during the meal how tasty it was! I made it according to the recipe apart from marinating it for a bit longer - about 6 hours. I used cooking cream and added some fresh coriander at the end. A delicious meal! Thanks for sharing.
