- 2000 grams Pork, Boned Rolled Roast
- 2000 grams water
Spicy Glazing Sauce
- 250 gram Brown Sugar (1cup)
- 250 grams malt vinegar
- 250 grams tomato sauce/ketchup, I Use Tomato Free recipe on community recipe by kermick
- 1 heaped tablespoon djon mustard
- 100 gram horseraddish cream or Creamed Russian Garlic
- 100 gram dark rum, I used spiced dark rum
Gravy
- 250 grams water
- 4 heaped teaspoons cornflour

Place all ingredients in TM Bowl and mix 30 seconds speed 5
Pour into a jug and set aside in refridgerator
Without cleaning bowl weigh in 1000gms of the water noting its level in the bowl
Place pork in Varoma dish place lid on and set Varoma in place 60minutes Varoma speed 2
Top up water to level above and reset for another 60minutes Varoma speed 2
Pre heat oven 200 degrees
remove Varoma tray remove pork leave water in TM Bowl
allow to rest for 15-20 minutes slice and lay in a baking tray pour over glaze
Place in oven 15- 20 minutes rebasting with pan juices
While pork is in the oven make gravy
add cornflour to water combine pour into TM Bowl with reatined cooking water
Cook 5minutes 90 degrees speed 2
taste check for seasoning adjust to taste

I take it you cook it on the "VAROMA" temp. Turn the temp fully around clockwise.

Thanks for the recipe, I'm trying this tonight. I'm new to Thermomix but it looks like the recipe is missing the temperature setting for cooking the pork in the Thermomix.
