Ingredients

Eggplant, Zucchini, mushroom and tomato sauce

  • 1/2 brown onion
  • 1 red onion
  • 3 cloves garlic
  • 1 -2 Zucchinis, 100 - 200 g
  • 20 - 30 grams oilve oil
  • 100 - 200 grams mushrooms
  • 200-300 grams eggplant
  • 1 --- Fresh herbs (to taste), Basil, Oregano, Parsley, Thyme
  • 400 grams tomatoes
  • 400 grams Passata

Meatballs

  • 3 slices bread
  • 500 grams Beef mince
  • 3 eggs

Recipe's preparation

    Meatballs
  1. Add the bread to the bowl.  Chop for 5 seconds on speed 8.

    Add any herbs, parmesan etc - chop 3 seconds on speed 6.

    Add beef mince and eggs.  Set to closed lid position and hit turbo 3 - 4 times.

     

    Wet some baking paper, scrunch it up and lay over the top (flat) tray of the Varoma.  Keep it a bit wrinkled up.

    Take your meat mixure, use a teaspoon to measure out scoops and roll int0 balls.  Lay on the tray.

    Clean the bowl and fill with 750grams of water.

     

    Place Varoma with the meatballs inside it on top and set to cook - Varoma, 25 minutes, spped 2.

     

    Once finished, place into the Thermoserver.

  2. Sauce
  3. Place onions, garlic, zucchini and eggplant in the bowl.  Chop for 4 seconds on speed5.  Scrape down the bowl and cook 20 minutes, speed 1, MC off.

     

    Add mushrooms and herbs, chop for 3 seconds, speed 4.

     

    Then add 400g of tomatos and 400grams of passata..

     

    Cook 20 minutes, 100 degrees, MC off and basket on top (to prevent splatter).

     

    Once cooked, whizz for 30 seconds on speed 4, then pour over the meatballs in the Thermoserver.

     

    Great served over cooked spagetti (also cooked in Thermomix) and with grated parmesan and a sprinkle of parsley on the top.

    Yummy dinner.
    i cooked the meatballs in the varoma while cooking th sauce and they were great and soft.
    i also didnt see where to add the olive oil in the recipe, but added it when the eggplant was cooking

    Yum, this was very nice. Thanks! Any reason why you couldnt start cooking the sauce with the meatballs steaming up top? Also, could you add a temperature in the first part of the sauce cooking, I just did it at 100 degrees. The sauce is delicious.

    Love this recipe. I cooked the meet balls separate in a pan and rolled and cooked them while the sauce was cooking. Yum.

    8/10 Enjoyed this very much as sauce was really delicious. Did not add Passata as felt the sauce would be too runny. Added seasoning and put tomato paste in recipe.

    I also cooked the meatballs in my healthy fryer as I like the color of them more.

    Wasn't a fan, turned out watery, needed more tomato, I added tomato paste, a little red wine and reduced it further.

    I'm confused, the total  cook time says 40 minutes...but if the meatballs are cooked for 25 minutes, then the zucchini garlic  onion eggplant cooks for 20 minutes, and then the rest  of the ingredients cook for another 20 minutes...that's over an hour! Isn't that a long time for the meatballs to be sitting in the thermoserver?
