Ingredients

mince

  • 500 grams pork mince
  • 500 grams Beef mince (lean)
  • 400 grams bacon, streaky
  • 1 onion
  • 1 clove garlic
  • sage, fresh
  • parsley leaf
  • 2 eggs
  • 50 grams Breadcrumbs (or stale bread)
  • 1 teaspoon stock paste, vegetable or beef
  • 3 tablespoon honey
  • 1 tablespoon lemon juce
  • 3 tablespoon Bbq sauce
  • 1 teaspoon Worcestshire Sauce
  • 1 teaspoon Dijon mustard
  • 1 tablespoon hot water

Recipe's preparation

    METHOD
  1. Glaze Method:

    1                    Place all ingredients into TM and combine on 4 for 1 minute or until happy with the consistency.

    2                    Taste.  If you think it needs a bit more honey or salt or whatever (FOR YOUR TASTE) add it.  This isn’t an exact science.   Set aside.

    Meatloaf Method:

    Preheat oven to 180 deg.

    1                    Place bread in TM and blitz on 9 for 5 seconds.  Set aside.

    2                    Place onion, garlic, parsley, sage in TM and blitz on 5 for 5 seconds.

    3                    Add both sets of mince, salt & pepper, eggs and breadcrumbs to TM and combine on 5 for about 2 mins or until you are happy with mix

    4                    Lightly grease loaf tin and arrange bacon so it lays on the bottom and hangs over the side (so that you can fold it over the meatloaf)

    5                    Place meatloaf mix over bacon and press down.  Fold sides of bacon over top and press down.

    6                    Cover top of meatloaf and bacon with glaze.

    7                    Cook for about 1 hour.

    8                    Serve.

     

    Notes: 

    This meatloaf can also be steamed in the Varoma if preferred.  It just needs to be modified in that you can either lay the bacon out in a sheet-like fashion; press mince mix on top (all over the bacon) and roll.  Also, I would put the glaze over the top in the Varoma.  Instead you could either reduce it on the stove top or pop it back in the TM and cook for 5 mins on 100, speed 2 (OR, create the glaze last, removing the step of needing to set the glaze aside first.

     

    My preference is to bake it as I like the bacon and glaze to go a bit sticky.  When I bake it I also like to put a tray underneath to catch any juices that may leach out.  Mince can tend to be watery.

     

     

    Finally, if you find the glaze is too much in quantity, you don’t have to use it all if you don’t want to.

    This recipe is definately a WINNER in our household. Next time i might save a bit of the glaze to pour over the cooked meatloaf instead of using it all before it is put into the oven.
    Would definately recommend this recipe as it is so easy, yummy and a hit with adults & children.

    Absolutely beautiful meal! The meat was delishous and the glaze was amazing. Next time I will make extra glaze to use as a gravy. Definitely a winner in this house

    Made this for dinner tonght. Added a carrot to the mix, rolled oats in place of breadcrumbs (as I didn't have any) and used all beef mince (for the same reason). Made more than my loaf tin so I rolled the rest into balls to make meatballs, cooked in the oven ina muffin tray so I could still use the glaze and will have them for lunchboxes tomorrow. Was really very nice!
