Mini Meatloaves with Pancetta (Donna Hay clone)
- 500 g Beef mince
- 1 zucchini, coarsely chopped
- 1 leek, coarsely chopped
- 1 carrot, coarsely chopped
- 1 tablespoons tomato paste
- 1 tablespoons Dijon mustard
- sea salt, to taste
- Freshly ground black pepper, to taste
- 6 slices pancetta
- 2 tablespoons Barbecue Sauce

- Add carrot, leek and zucchni to mixer bowl and chop 3 sec / speed 6.
- Add beef mince, tomato paste, Dijon mustard, salt and pepper to mixer bowl and combine 5 sec / speed 4.
- Preheat oven to 200 deg.
- Line a baking tray with baking paper.
- Divide the mixture into 6 balls and flatten into patties.
- Place patties on the baking tray and cover each patty with 1 slice pancetta.
- Brush the meatloaves with barbecue sauce.
- Bake for 15-20 minutes in the oven or until crispy and cooked through.
- Serve with salad / mash / steamed veg.

Really tasty and simple!
I think I put a bit too much zucchini as there was a lot of liquid that came out, however they were still super moist. Really glad that I put them on a pizza tray as it kept all the liquid contained and I did pour some off half way through.
They all got eaten up and we'll definitely make them again. Great way to get hidden veg
sharman: I don't see why not. They do hold together pretty well, but adding an egg would definitely help if making them smaller.
Could you add an egg for binding, and make small bite size versions for a nibbles plate ?
