Ingredients
Nutty Chicken Patties with Mustard Butter
- 125 grams pistachio nuts
- 1 kilogram of chicken
- 2-4 spring onions (depending on size) cut into 3 cm pieces
- 1 clove garlic
- 1 small bunch basil
- 1 Sprig rosemary (leaves only)
- 1 Small handful of Oregano
- 100 grams breadcrumbs (can be made in Thermomix)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon vegetable stock concentrate
- 2 teaspoons seeded mustard
- 1 egg
Mustard Butter
- 150 grams butter at room temperature
- 1 1/2 tablespoons seeded mustard

Place Pistachio nuts in TM bowl and chop for 2 seconds on speed 6. Set aside
Mince meat in 250g portions by placing in Closed Lid position and turbo 3-4 times. Set each batch aside
Place spring onions, basil, rosemary, oregano and garlic in bowl and chop for 5 seconds on speed 7. Scrape down
Add reserved nuts, chicken, breadcrumbs, Worcestershire sauce, vegetable stock, seeded mustard and egg.
Mix 20 seconds, reverse, speed 3 with the aid of the spatula.
Shape into about 20 drumstick shaped patties, cover and refrigerate for 2 hours
Cook patties on an oiled bar-b-q plate or pan, turning occasionally until cooked through
Mustard butter
Place butter and mustard in TM bowl and mix for 20 seconds on speed 5

Tip
These are really tasty and so easy. You could try cooking them in the Varoma.
Serve with mustard butter and a salad.
