- zucchini
Bolognese Sauce
- 1 brown onions, halved
- 2 cloves garlic
- 100 grams carrot
- 100 grams mushrooms
- 30 grams Olive Oil or Oil of Choice
- 1 tsp Dried oregano (or fresh)
- 1 tsp dried basil (or fresh)
- 1 tsp dried chili flakes (to taste)
- 1 pinch ground cinnamon
- 700 grams sugar free tomato passata
- 1 tablespoon Vegetable Stock Paste (BCB)
- 1 sachet sugar free tomato paste
- 1 pinch Cracked Black Pepper to taste
- 600 grams mince of choice (beef, pork, veal or combination)

Using a spiralizer or peeler, create zucchini noodles and set aside in your varoma.
Place onion, garlic, carrot and mushrooms into bowl and blitz on speed 7 for 3 seconds.
Scrape down the sides of the bowl and add oil of choice. Saute with measuring cup off for 3 minutes, 120 degrees, speed 1.
Add oregano, basil, chili flakes, cinnamon, passata, vegetable stock paste and black pepper to the bowl.
Insert simmering basket into the bowl and place the mince inside it. Cook for 15 minutes, varoma temp, speed 4. Then break up the mince with your spatula.
Put your varoma in place (with zoodles in it) and cook for a further 10 minutes, varoma temp, speed 4. Ensure mince is cooked through and drain your zoodles of any excess moisture.
Using your spatula, tip the mince into the bowl with the sauce and mix for 10 seconds on "Counter-clockwise operation" speed 4 to break up the mince and mix with the sauce. Serve your bolognese sauce over your zoodles - enjoy!

Tip
You can use any vegetables in place of the carrot and mushrooms - I often sneak a few extra in there and blitz them down to hide them from kids (and the husband!). You can also leave the vegetables chunkier if you prefer by adding them chopped to preferred size with the passata step.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The whole family enjoyed this Bolognaise. The only change I will make next time is to reduce the final 10 seconds so that the texture is a bit chunky. Adults had zoodles and my grandson has spaghetti.
