Ingredients

Cajun spice

  • 1 tablespoons cumin seed
  • 1 tablespoons dried thyme
  • 1 tablespoon dried oregano
  • 1 tablespoon Garlic powder
  • 2 teaspoon cayenne pepper
  • 2 teaspoons onion salt
  • 2 teaspoons sweet paprika

Slaw

  • 1 carrot, cut into pieces
  • 2 spring onion, trimmed and cut into pieces
  • 250 grams cabbage, cut into pieces
  • 80 grams mayonnaise
  • 1\4-1\2 teaspoons reserved cajun spice mix

Chicken snitty

  • 100 grams almond meal
  • 80 grams Coconut Flour
  • 3 eggs
  • 3 chicken breasts
  • oil, for frying
  • 2-3 tablespoons reserved cajun spice mix

Recipe's preparation

    Cajun spice
  1. 1. Place all spice mix ingredients into mixing bowl and mill 10sec/speed 9. Transfer into a sealable jar or container and set aside. Do not clean mixing bowl.
  2. Slaw
  3. 1. Place all Slaw ingrediends into the mixing bowl and chop 3 sec/speed 4

    2. Scrape down sides of mixing bowl with spatula and chop
    2 sec/speed 4.
    Transfer into a container and place into fridge until ready to serve.
  4. Chicken Snitty
  5. 1. Place bowl onto mixing bowl lid and weigh 100g almond meal into it. Set bowl aside
    Place another bowl onto mixing bowl lid and weigh 80g of coconut flour into it. Add 2-3 tablespoons of reserved cajun spice mix, stir to combine and set aside.
    Crack 3 eggs into another bowl and lightly wisk.

    2. Cut each chicken breast in half horizontally. Using a meat mallet flatten out eash chicken portion. Dip each piece into flour mixture, then dip into egg wash and then into almond meal. gently patten each side to coat. Place onto a large plate

    3. If cooking in airfryer: spray chicken with olive oil spray and cook for 20 Minutes 80 degrees.
    If cooking in the pan: Place a large frying pan over high heat and add oil. Cook until chicken is cooked through

Tip

Serve with Zucchine chips or Sweet potato chips
