Ingredients

Filling

  • 3 centimetre ginger
  • 3 cloves Garlic.
  • Chillies, to taste
  • 1 red onion
  • 20 g sesame oil
  • 400 grams pork meat
  • 500 grams green prawns
  • 2 tbsp kepas manus (sweet soy sauce)
  • 3 tbsp fish sauce
  • 1/2 package shitake mushroom, dried, Soaked in water
  • 1 tbsp cornflour
  • 1 bunch coriander

Dipping sauce

  • 2 tbsp soy sauce
  • 1 tbsp sweet chili sauce
  • 1 tbsp sesame oil
  • cube fresh ginger piece

Dumpling wrapper

  • 40 portions dumpling wrappers

Recipe's preparation

    Filling
  1. Add ginger, garlic, chilli and red onion. 5 second/speed 6. Scrape down sides and repeat. 

  2. Pour in oil. Saute for 4 minutes/100 degrees/speed 1. Remove and set aside.

  3. Add pork, peeled prawns and squeezed out shitake mushrooms. 10 seconds/speed 7.

  4. Add the rest of the ingredients including the reserved cooked onion. Blend for 20 seconds/speed 3 or until combined.

  5. Then place in vermoma on both levels. Fill water to blades. Speed 4/vermoma/20 minutes.

  6. Wrapping Dumpling
  7. Have fun figuring out how to roll. Two suggestions-Wet edges and place a large tbs of filling in the middle. Fold one corner to another making a triangle, stand it upright and pinch the sides together. Or, wet edges and place a tbs in the middle. Bring all four corners together and pinch in the middle, then pinch down all four sides. 

  8. Dipping sauce
  9. Thinly slice fresh ginger

  10. Combine all ingredients in small serving dipping dish. 

Tip

Make 20 dumplings and freeze half the filling portion for a quicker meal another night. Experiement with wrappers and make different styled dumplings. Serve with a quick Asian green stirfry veggies.Let the kids help with wrapping! Eat using an asian style spoon and chopsticks.
