Ingredients
Quick Chicken and Vegetable Casserole
- 2 stalks Celery, cut in thirds
- 1 --- leek, chopped in chunks
- 100 g carrot, peeled, chunked
- 1 level teaspoon Dijon mustard
- 2-4 cloves garlic, peeled
- 40 g plain flour
- 125 g white wine, dry
- 20 g rice malt syrup, honey or substitute
- 5-6 pieces lovely legs (or thigh fillets, approx 500g), Thawed, removed from fridge 30min prior
- 1 level tbsp Chicken stock concentrate
- 250 g water
- 40 g oil
- 1 zuchinni, cut in chunks

- Cut the zucchini into thirds. Place in bowl.
CHOP 5 sec/ speed 4 and set aside - Place in the bowl: leek; carrot; celery; garlic.
CHOP 5 sec/ speed 5. Scrape down.
Add 1 tsp Dijon mustard and oil - Sauté 6 minutes/120 degrees/"Counter-clockwise operation" speed 1, MC off. Scrape down. Add flour
Sauté a further 5 minutes /Varoma/ "Counter-clockwise operation" speed 0.5. Scrape down. - Add white wine; stock concentrate; water; chicken, reserved zucchini, rice malt syrup
- Cook 15 mins/100/"Counter-clockwise operation" speed "Gentle stir setting" / MC on. Use spatula to assist as cooking
- Transfer to thermoserver or rest 5 mins before serving
- Serve with mash or rice
Serves 2-3 people
Tip
Chicken thigh fillets work well and if used can feed more people. If using thigh fillets cooking times will be less. Leaveout the honey and mustard for a traditional chicken dinner. You can also add curry spices at the sauté stage.
Makes a lot of sauce. You can cook extra chicken or freeze the sauce for another night.
Sauce easily converts to soup, add noodles

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
