Ingredients

Paste

  • 70gm raw cashews
  • 3 cloves garlic
  • 2 stalks lemongrass, cut into 1-2cm pieces
  • 5 sprigs spring onion
  • 2 leaves Kaffir lime leaves
  • 1-2 green chillis (depending on how spicy you want it)
  • 30 gms olive oil

Green curry

  • 600ml coconut milk
  • 400 gms Vegetables, I use red capsicum sliced, green beans cut into 2-3cm pieces, cauliflower florets and brocolli florets
  • 700gms Chicken Thigh Diced
  • 4 level tbsp fish sauce
  • 1 level tbsp raw sugar

Recipe's preparation

  1. 1. Place cashews in TM and mKettle"Kettle" ill 5 secs/speed 9 and set aside
    2. Put paste ingredients(minus oil) into Closed lid"Closed lid" and chop on 5 seconds/speed 7. Scrape down sides of bowl and repeat.
    3. Put in olive oil and fry for 5 mins 100C speed 1
    4. Add coconut milk and mix for 30 secs speed 9
    5. Cook for 3 mins Counter-clockwise operation"Counter-clockwise operation" varoma temp sp 1
    6. Add chicken, cauliflower florets, green beans and capsicum and cook for 5mins Counter-clockwise operation"Counter-clockwise operation" varoma temp sp 1
    7. Add brocolli florets and cook 5mins Counter-clockwise operation"Counter-clockwise operation" varoma temp sp 1
    8. Add raw sugar, fish sauce and milled cashwes and stir 20secs Counter-clockwise operation"Counter-clockwise operation" sp1
    9. Pour into Thermoserver to stay warm whilst cooking rice.
    10. Without washing the bowl, add 1L of water to bowl and insert simmering basket with 400g rinsed Basmati rice and steam for 17mins Varoma temp sp4

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
