Ingredients
Spiced Beef Curry
- 1 teaspoon coriander seeds
- 1 teaspoon cumin seeds
- 4 green cardamon pods, seeds only
- 4 cloves
- 1 onion
- 2 cloves garlic
- 2.5 cm piece of root garlic, peeled
- 30 g vegetable or peanut oil
- 20 g sesame oil
- 1 tablespoon indian curry paste
- 1 teaspoon turmeric
- 700 g rump steak cut into 3 cm chunks
- 250 g potatoes peeled and cut into 2 cm chunks
- 4 tomatoes quatered (about 350g)
- 1 teaspoon sugar
- 20 g light soy sauce
- 400 g coconut milk
- 2 fresh red chillies, bruised
- 50 g cashew nuts
- salt and pepper to taste
- 100 g water

Place coriander seeds, cumin seeds, cardamom seeds and cloves in bowl and roast for 2 mins, 100 degrees speed 1
Mill for 2 minutes speed 9. Set aside
Place onion, garlic and ginger in bowl and chop for 3 seconds on speed 7 (no need to clean bowl out in between)
Scrape down the sides of the bowl and add vegetable and sesame oil and cook for 3 minutes, varoma temp, speed 1
Add curry paste, turmeric and roasted spices and cook for 3 minutes, varoma temp, speed 1
Add beef and cook for 5 minutes, varoma temp, reverse, speed soft
Add potatoes, tomatoes, coconut milk, water, sugar, light soy sauce, chillies and seasoning and cook for 30 minutes, 100 degrees, reverse, speed soft
Add cashew nuts and cook for a further 1 minutes, 100 degrees, reverse, speed soft
Serve with basmati rice
