Ingredients

Stock

  • 1 litre water, TM stock or chicken stock
  • 1/4 tablespoons each of: Cumin, Curry powder, tumeric, cardamom
  • 30 grams oil or ghee
  • 1 brown onion
  • 1 clove garlic

Chicken

  • 2 fillets Free Range Chicken, skin off

Vegetables

  • 1 carrot
  • 1 bunch Brocollini or brocolli flourettes

To Serve

  • 1/4 Cup Toasted Cashews
  • 1/4 Cup sultanas
  • 1 bunch Spinach Leaves, To line Thermoserver

Recipe's preparation

    Method
  1. Add onion, garlic, spices and oil to TM, blitz for approx 6 seconds speed 6

    Gently saute in TM, 100 degrees speed 1 reverse for 3 minutes.

  2. Add Stock.

    Place Rice in steamer basket

  3. Add sliced chicken (or fish) to bottom varoma tray and sliced vegetable to top tray.

    Cook on Varoma speed 1 reverse for 22 min.

     

  4. Line thermoserver with spinach.

    When rice is cooked, add to thermoserver with chicken and vegetables, scoop out some of the onion stock and mix through.

    Add nuts and sultanas.

    Rest with lid on for 3 minutes and serve with minted yoghurt.

Tip

Fish can be used instead of chicken as well as other vegetables if desired.

Also great with mango chutney.
