Chicken Curry and Rice

  • 1 tablespoon coconut oil
  • 1 onion, Quartered
  • 2 chicken breast, 3cm dice
  • 3 clove garlic
  • 2 teaspoons ground ginger
  • 2 teaspoons ground coriander seeds
  • 1 can coconut milk
  • 2 carrots
  • 30 grams Thai red curry paste
  • to taste salt
  • to taste pepper, ground
  • 120 grams Fresh Baby Spinach
  • 20 grams lime juice
  • 20 grams brown sugar

Recipe's preparation

    Thai Chicken Coconut Curry
  1. Place chopped carrots in mixing bowl and chop 5 sec/speed 5. Remove and place in a bowl. Rinse mixing bowl.
  2. Place onion and garlic in mixing bowl and chop 5 sec/speed 5.
  3. Add coconut oil and sauté 2mins/120deg/speed Gentle stir setting"Gentle stir setting"
  4. Add spices and sauté 2mins/120deg/speed Gentle stir setting"Gentle stir setting"
  5. Add coconut milk, curry paste, carrots, chicken salt and pepper. Cook 12mins/100deg/Counter-clockwise operation"Counter-clockwise operation" /speed Gentle stir setting"Gentle stir setting"
  6. Use the spatula to stir through lime juice, brown sugar and spinach. Cook 2mins/100deg/Counter-clockwise operation"Counter-clockwise operation" /speed Gentle stir setting"Gentle stir setting"
  7. Serve with prepared rice or flat bread.

Tip

Cook rice before cooking curry and keep warm in Thermoserver.

Chicken thigh is also suitable.

Meal Prep: Prepare up to step 4. Place step 5 ingredients in mixing bowl (omit chicken at this stage). Stir 20sec/Counter-clockwise operation"Counter-clockwise operation" /speed Gentle stir setting"Gentle stir setting" Refrigerate until needed. When cooking, place chicken and sauce in mixing bowl and continue cooking from step 5. Cooking time will need to slightly increase as coconut milk has been chilled.
