Ingredients
relish
- 1 eggplant, approx500-600g cut into 2cm dice
- 3 large dried chilli soaked in water for 15mins, i used crushed chillis 3tsp
- 2 shallots
- 3 garlic cloves
- 2tbs Dried prawns
- 1tsp salt
- 1 tomato halved
- 30g peanut or veg oil
- 125g pork mince, i used left over pork roast
- 1/2 tsp tumeric powder
- juice one lime
- 2 tbs Coriander leaves (fresh)

Drain chillis and blend with shallotsa/garlic/prawns/salt speed 9/20-30sec blend a little then scrape down and set aside
i put piece of greaseproof under lid it stops paste getting under seal
Put oil in jug and heat 5mins/veroma/ speed 2
now add pork and cook veroma/5mins/rev/speed 2
then add spice mix and tumeric cook further 5mins/veroma/rev speed 2
now add eggplant and cook 30-40 mins till cooked 100/rev/speed 2
stir through lime juice and serve with rice and sprinkle with coriander
paste
Tip
you could omit pork/prawns for tasty vegetarian dish
