Ingredients

Coronation Sauce

  • 1 onion
  • 20 g olive oil
  • 1 tablespoon madras curry powder
  • 1 tbsp tomato paste
  • 110 g water
  • 80 g Mango Chutney
  • 120 g natural yogurt
  • 120 g mayonnaise
  • 30 g sultanas

Chicken

  • 500 g Left over roast chicken or chicken breast

Recipe's preparation

  1. Place onion into TM bowl and chop speed 5 / 4 seconds.

     

  2. Add oil to TM Bowl and saute speed 1/120 degrees/2 mins.

     

  3. Add madras curry powder, tomato paste and water to TM bowl and cook speed 1/100 degrees /1 min.

     

  4. Add mango Chutney, yogurt, mayonaise and sultanas to TM bowl, mix speed 4/15 seconds or until combined.

     

  5. In a separate bowl, shred chicken, then add coronation sauce and mix until all of the chicken is covered.  Cover bowl with cling film and place in fridge until ready to serve.

Tip

This is best made a hour or two (or longer) before serving so the flavours can marinade into the chicken.

I serve this with rice and salad, then any left over will go in a lunch box the following day - delicious in a sandwich or with a simple salad.

    Yummy. Followed recipe except subbed in Mrs Balls chutney as had no mango, and used basic curry powder. Devine on jacket potatoes or even on rice. It does have quite a kick to it. Recommend reducing curry powder for kids/those not keen on spice. Thanks for a fab recipe.
