Ingredients

Kims Spanakopita

  • 1 onion, cut into quarter
  • 2 cloves garlic, peeled
  • 4 shallots, diced
  • 450 grams fresh spinach leaves, chopped
  • 250 grams frozen spinach leaves, chopped
  • 1 bunch fresh parsley, chopped
  • 3 eggs
  • 300 grams ricotta cheese
  • 300 grams feta cheese
  • 1 Filo Pastry
  • 4 tablespoons sesame seeds, to sprinkle over top
  • 100 grams olive oil, 20 grs for mix and 80grs for pasting filo

Recipe's preparation

    creating filling
  1. add onion cut into quarters and garlic cloves into bowl
    5 sec speed 5 Blend"Blend" Closed lid"Closed lid"

  2. add cut up shallots and 20g of olive oil
    4 mins varoma speed 1Blend"Blend" Closed lid"Closed lid"

  3. add chopped up parsley and a 4 handful of spinach into the bowl
    10 mins varoma speed 4 measuring cup off adding frozen spinach and remaing fresh leaves 1 handfull at a time

  4. remove and strain mixture place into a seperate bowl

  5. Pre heat oven at 160 degs
    wash and dry thermomix bowl

  6. add ricotta chesse add fetta chesse
    salt and pepper to taste mix 5 secs speed 2 reverse Counter-clockwise operation"Counter-clockwise operation"

  7. add 3 eggs
    mix 5 secs speed 2 reverse Counter-clockwise operation"Counter-clockwise operation"

  8. add to the spinach mix and stir all together

  9. prepare a baking dish brush with olive oil place 1 filo pastry sheet then brush with oil and repeat 8 times
    add filling then repeat filo pastry and oil 8 times

  10. sprinkle sesame seeds over the top cook in oven 160 deg for 45mins

can substitute filo pastry for puff pastry
