Ingredients

Pastry

  • 250 g Gluten Free Flour Mix
  • 2 tsp Guar Gum
  • 120 g olive oil spread
  • 80 g coconut oil, solid
  • 1/2 tsp Himalayan salt
  • 2 tsp lemon juice
  • 80 g chilled water

Filling

  • 200 g pumpkin, chopped into 1cm cubes
  • 120 g Chorzio, halved
  • 100 g spring onions / shallots
  • 6 eggs
  • 100 g rice milk
  • Himalayan salt, to taste
  • cracked pepper, to taste
  • 100 g goats cheese
  • 50 g baby spinach

Recipe's preparation

    Pastry
  1. 1. Place Flour into Thermomix bowl and mix for 1 second / Turbo
    2. Add Guar gum, olive oil spread, coconut oil, Himalayan salt, Lemon juice and chilled water and knead for 20 – 30 seconds / Closed lid / dough mode
    3. Turn onto floured Thermomat. Shape dough into a rectangle
    4. Roll until dough is approximately 40cm x 12cm. Fold top 1/3 down and fold bottom 1/3 up. Turn dough around and roll again.
    5. Repeat step 4 three (3) times (keep dough, mat and pin floured)
    6. Refrigerate for 30 minutes. Roll out to 2 - 3mm thick and place into a greased quiche pan. Line with baking paper and fill with rice or weights
    7. Bake in 180C oven for 10 minutes. Remove rice or weights and bake a further 5 minutes

  2. Filling
  3. 1. Place pumpkin into Thermomix basket, with 500g water in Thermomix bowl, and cook for 10 minutes / Varoma / speed 2. Set aside
    2. Place chorizo and spring onions / shallots into Thermomix bowl and chop for 5 seconds / speed 7
    3. Add eggs, rice milk, salt and pepper and mix for 5 seconds / speed 3
    4. Add goat’s cheese, baby spinach and precooked pumpkin and mix for 5 seconds / counter-clockwise operation speed 3
    5. Pour into blind baked shell and bake in a 180C oven for 25 – 30 minutes

Tip

*NOTE: Pastry makes enough for 2 or 3 quiches (or other pastries). Pastry can be frozen and reused later.
