Ingredients
Ricotta panackes
- 75 grams Butter
- 40 gram caster sugar
- 3 teaspoons baking powder
- 2 eggs
- 300 grams plain flour
- 380 grams buttermilk or skim milk
- 200 grams Fresh ricotta, (best from deli rather than a tub)
- extra butter for cooking

1. Melt butter in TM bowl, 2 min 50 C speed 2
2. Add all other ingredients (except extra butter) and mix 10 sec, speed 6.
3. Scrape down sides of bowl and mix another 5 sec speed 6 if needed.
4. Cook approx 1/3 cup at a time in pre-heated frypan, medium heat, spreading out with the spatula to make a round shape,turning over after 1-2 minutes .
5. Serve with topping of your choice.

Delicious will make again, thank you for sharing. The only change I would make is to reduce Baking Powder to 1.5 teaspoons.

These are so good. Easy to make and fluffy.
It was a bit tricky to make them into circles, but no one seemed to mind the odd shapes.
I'm thinking of trying them in the waffle maker next time.

Fantastic recipe. I subbed two overripe bananas for the sugar as they were shared with our 2.5 year old and 10 month old. They were still nice and sweet. A perfect family brunch recipe. Thanks so much!
Lovely. I halved the quantities to make a small batch for my daughter and I - made 5 good sized pancakes!
These were a big hit. I only used 250gr of flour as I ran out and 350gr almond milk as i had no regular milk. Very light and fluffy! I will be making these whenever i have leftover ricotta.
