Ingredients

  • 2 cloves garlic
  • 1 onion quartered
  • 2 bacon rashers, chopped into 3
  • 1 tomato, halved
  • 1 handful of fresh herbs, (I used rosemary, basil, parsley)
  • 1 teaspoon beef stock concentrate, (from Full Steam Ahead book)
  • 1-2 cups of cooked rice
  • 15 g olive oil
  • 2 tablespoons parmesan cheese, grated, plus extra from sprinkling
  • 2-4 Large field Mushrooms

Recipe's preparation

  1. Pre-heat oven 180degrees

    Garlic into TMX 3sec/spd 5

    Add onion and bacon 5secs/spd 5

    Add oil and saute 5mins/Varoma/spd Gentle stir setting"Gentle stir setting"

    Add tomato and herbs and stock 5secs/spd 5

    Add rice and parmesan and stir until encorporated 10-20secs/Counter-clockwise operation"Counter-clockwise operation" /spd 3

    wipe any excess dirt off your mushrooms (do not wash as they will become water logged) and remove the stem. Spoon rice filling into mushrooms, ensuring it is packed down under the lip of the mushroom too.

    Sprinkle with the extra parmesan, drizzle some more oil into a baking dish and bake for 30-40mins til browned on top

Tip

Great to use up leftover rice and add any ingredients you have in the fridge or garden
